  1. Some people are just gifted teachers. Claire is one of those people. It took me a long time to understand the entire bread baking process. This video gives a wealth of knowledge that is took me years to obtain.

  2. Ok, the gentle nudge towards the sticky isn't nearly good enough. I used dark rye flower with my sour dough. This stuff is akin to roof tar. Everything it gets on, paddles, bowls, counter, sink bottom, hands. I probably used 20 gallons of hot water, a plastic scraper, finger nails and dish scrubber to scrub and scratch and scrape anywhere this stuff touched. My hands are red from the hot water and scraping. Consider yourself warned!

  3. Hi! Can you tell me how long dough can stay in the refrigerator? In my case: stay one night – beautifully grown bread. If stay three nights – flat bread. Is three nighs too long? And thank you so much for the recipe and greetings from Poland!

    patrick is excellent at encouragement and getting you started. it is not the perfect sourdough recipe but it will work! i made my own starter from his guide, i made my first loaf and it was not perfect but was delicious! and it did work!!

  6. i feed my started sometimes 1 at 3 months… it needs 2-3 days maybe 4 before it "wakes up" again… but is not the same after… you gotta feed it every day for several times before you get tge old normal sourdough started with simillar properties …
    whatever u do nake sure you only use white wheat flour .. never whole wheat or rye cos that one will forever change the properties from the original starter
