Ingredients: 2 sausage patties 2 tortillas (I used Rise & Puff) 6 eggs Salt & Pepper 1/2 cup cheese 1/4 red onion, chopped Avocado oil spray
Directions: Preheat oven to 350F. Cook the sausage patties until 3/4 way cooked through, remove from heat and set aside. In a separate pan heat the tortillas over medium heat til they puff, about 30 seconds per side. Remove from pan and put in a tortilla holder if you have one. Crack the eggs in a bowl, add salt and pepper, then whisk it up. Grate the cheese, then finely chop the red onion. Roll the tortillas and cut them into six equal pieces each. Spritz the ceramic muffin tin with some avocado oil. Add two pieces of the tortilla to create a round at the bottom of the muffin mold. This is the ‘crust’ of the lazy quiche. Repeat until you have 6 ‘crusts’. Beat the eggs once more then evenly pour into the 6 muffin molds. This will make the quiches nice and fluffy while baking. Divide and crumble the sausage in each of the molds. Sprinkle the red onion, and top with the shredded cheese. Place it in the oven and bake it for 15-25 minutes or until the center is firm and not jiggly. Remove from the oven, and allow to cool. They will ‘deflate’ but that is normal. Enjoy and store any remaining ‘quiches’ in the fridge for up to 3 days.
