Oh yes, that is precisely why I have to sit down and remember all my family recipes, and trial out each ingredient to rebuild old tastes that my family members who are no longer with me can recreate again. Thanks so much, ATK; you guys really are committed to going down this path. I do think I'll have to start looking into that dry-aged chorizo.

What did the corn starch in the wine accomplish? Thickening agent I presume.
Been using this dry Spanish Chorizo as shown here for years in my paella,as well as steamed mussels which we prefer over clams.
Who's getting fresh clams in Boise?
I love clams, but every time I eat them it's a 50/50 chance that I spend the night vacating my stomach. That even includes clams from well established seafood restaurants and even more expensive restaurants. I've met others that this also happens with. The result is I've had to give up eating clams.
The strange thing is this only happens with clams with exception to geoduck. Oysters and muscles are not a problem.
If you can explain why that happens and how to prevent it, I'd love to hear it because I sure to miss them.
I used to do a very similar dish called Clams Portuguese. Only trouble was when were in Portugal no one knew what I was talking about! Thanks for a reminder…I 100% agree that clams and chorizo pair very well.
