Hi Neighbours, Today I made a beautify Pork Roast that comes out juicy and delicious every time I make it this way. I have ingredients ect. below for that and the popovers that I made. Pork Roast ( I used bone in about 3 pound roast) Preheat oven to 400℉ for the first 45 minutes of cooking than reduce to 350℉ for remainder of cook time
the rub
1/4 cup ( or a bit more)of olive oil and melted butter combined ( I used ghee melted and olive oil mixed)
1 tsp dried rosemary
1 tsp of kosher salt or a coarse salt
1/4 tsp of pepper
1/2 tsp of paprika
1 tablespoon of minced garlic
Mix above ingredients together and rub all over the roast
Place roast in roasting pan on rack or if you don’t have a rack use carrots to sit it on
Sliced onion any size
3-4 sliced carrots ( sliced kind of thin but not to thin and I sliced on an angle maybe half inch thickness)
place sliced onion and carrots around the roast.
add a cup or so of water to roster as well.
so in your preheated 400℉ oven place your roast. I put it second shelf from the bottom of oven.
after 45 minutes turn oven down to 350°F and do these next steps if you like a gravy
If you do t want the gravy just finish cooking at the 350°F until done

take out roast add more water like a cup or two and a cup of marsala dry wine ( wine is optional, I like the taste it gives to the gravy)
turn down your oven to 350℉ for remainder of cooking time ( internal temp 145 to 150 ℉
Then when it was almost done used easy blend mixed with water and add to the roasting pan mix well it may need a bit of water and more wine if you like at this point to make a gravy.
When done I removed the veggies from the gravy before serving.
NOTE You can wait until the roast is done and remove the veggies then make the gravy if you like
Ok now the popovers
I used the king Arthur flour recipe for this when I make them. Bake these at 450℉ for 30-35 minutes I found the 35 minutes a bit too much in my oven but still fine but close to 30 minute mark check on them . If they are a nice brown and puffed up they are ready
Here is the recipe
Popovers
4 large eggs, warmed in a cup of hot water for 10 minutes before cracking ( or at room temp)
1 1/2 cups (340g) milk (skim, low-fat, or full-fat), lukewarm ( or room temp)
3/4 teaspoon salt*
1 1/2 cups (180g) King Arthur Unbleached All-Purpose Flour
3 tablespoons (43g) butter, melted
I baked the popovers in a 450℉ oven second shelf from the bottom for about 30-35 minutes

yum loving the roast, I've never actually made one before! That sure is fantastic! Yesterday I actually roasted a spatchcock tandoori chicken for the first time and it was great. the popovers must be a fabulous treat too, I've never had them but they seem so tasty! Glad you had a nice weekend!

Roast looks good. I finally found a good popover recipe that works for me. I have ceramic pans I use that work better than my popover pan. Screaming hot before the batter is put in. Thank you for sharing your recipes with us, Jerri-ellen. Stay safe and stay warm

Fantastic ! Love your pop overs, we call them Yorkshire puddings here in England they're very similar. Ooh hot gravy poured on them so divine along with the meat and all the trimmings! Well done!
