You should give german bread a try. We are the bread kings/queens. Here we have thousands of officially acknowledged bread recipes. Also, please don't use the bread machine to bake it. Bake it in a traditional oven, where it can further rise and has enough air to get a delicious golden crust
You’re supposed to leave the kneading paddle in the bread while it bakes. It’s not a fully automated machine if you can’t do it. But you’re supposed to be able to pop the blade out from the bottom of the bowl so it comes out when you take your bread out.
My recipe calls for sugar. I can’t imagine it without that, it would definitely not be appealing.

I let the machine run it's cycle, but I never use the bread machine for baking. I do that in conventional bakeware
in a conventional oven.
Just a note, you didnt truly trust the recipie if you "added a bunch of other things"… but i agree with you, flavor was certainly missing!!
