Chipotle peppers are smoked and dried red jalapeños. That’s it. I use a kamado-style smoker grill to smoke the red jalapeno peppers for at least 2-3 hours. The temperature needs to be very low to avoid cooking the peppers, ideally around 160°F or so. After smoking, all that’s left is to dehydrate the peppers into dried chipotles. These smoky peppers are a flavorful addition to spice blends, rubs, and soups and stews. Yum!
