Making Pasta Dough – NoRecipeRequired.com



Here’s a simple demonstration on how to make fresh pasta dough using the “well” method. There’s just a few ingredients and you don’t need any special equipment. After mixing the dough, let it rest for about 30 minutes in the refrigerator prior to rolling it out.

  1. My mother, in her 60's, has been doing this recipe as long as she could cook… and she learned it and variants of it from her mother and my paternal grandmother and a friend of hers. A timeless masterpiece. And filling! If it's not broke, don't fix it! Just make more!
