Ingredients:
– 2-3 cloves garlic
– Large bunch of fresh basil (about 4oz by weight)
– 3 Tbsp Cashews
– 2 oz Parmesan cheese
– 1/2 Cup olive oil
– Salt
Instructions:
1. Mash garlic and a pinch of salt in mortar until smooth.
2. Add basil by the handful until fully incorporated.
3. Add cashews, making sure to mash them thoroughly so no chunks remain.
4. Add Parmesan cheese by the handful until a thick paste forms.
5. Drizzle in olive oil little by little until a cohesive sauce forms. Add salt and pepper to taste.
6. Add to hot pasta and stir to combine. Enjoy!
Notes:
– I recommend using a mild olive oil that tastes good by itself. You don’t want to use an oil that’s bitter since this sauce won’t be cooked.

Try macadamia nuts. I will try cashews now though. Pine nuts are bitte.
Blanching the basil stops it from browning. If you don't blanch it turns a brown color after 20minutes or so
Walnuts also work really well as pine nut substitute! Maybe a bit less sweet than cashews
Boiled basil is bugging me more than it should
