Manapua Magic: Steam-Fried Pork Buns with Watercress Filling

Pork Buns Steam Fried with Watercress

Full Recipe:

Dough Recipe

1 cup of warm milk
1 large egg
2 tablespoons of sugar
1/4 cup melted butter
3 cups of all purpose flour
3 tablespoons of milk powder (if milk powder isn’t available it’s okay to go without it or just add another 1/2 cup of milk.
2 1/4 tsp of yeast or 7grams

1. Mix all the liquid ingredients first then add yeast
2. Mix well and then add fry ingredients and start forming a dough.
3. Knead dough for some time then let it rest for an hour or until it is double in size.
4. Once dough is ready then start assembling the buns

Filling

• 500grams of fine chopped pork belly meat
• 1 large onion finely chopped
• 3-4 cloves of garlic minced
• 1/2 teaspoon baking soda
• 2-3 pls tablespoons light soy sauce
• 1-2 tablespoons dark soy sauce
• Salt and pepper to season
• fine chopped watercress

Method

1. Chop the meat small and wash it with hot water
2. Drain water well
3. Marinate meat in baking soda, garlic and soy sauce both dark and light soy sauce.
4. Marinate meat for an hour.
5. Once the dough is ready then start assembling the buns.
