MANGALOREAN-STYLE PRAWN GHEE ROAST (Serves 2)
INGREDIENTS:
200 gms prawns (cleaned)
2 tbsp yogurt
1 tsp red chili powder
1 1/2 tsp turmeric powder
1 tsp pepper powder
Salt (as per taste)
For the masala:
4 Kashmiri chilies
1 tsp whole pepper
1 tsp cumin seeds
1 tsp coriander seeds
8-9 cloves garlic
2 tbsp lime juice
2-3 tbsp tamarind extract/ chutney
2-3 tbsp water
For frying:
2 tbsp ghee
2 tbsp curry leaves
METHOD:
In a bowl, place prawns and marinate with yogurt, red chili powder, turmeric powder, pepper powder and salt.
Keep aside for a minimum of 15 minutes.
In a pan, roast Kashmiri chilies, whole pepper, cumin and coriander seeds for 3-4 minutes.
Transfer in a dry grind cup, add some salt and grind to a coarse powder.
Next add in the garlic, lime juice, tamarind extract, water and grind into a thick paste.
In a pan, add the ghee and fry the marinated prawns.
Add in the prepared masala once the prawns are half-cooked.
Combine well and fry (continuously stir).
Next add in the curry leaves and roast until the gravy thickens.
And you are done!
