CHICKEN LABABDAR
Ingredients
Chicken 1 kg 12 pcs, marinate with
Salt ½ tsp
Turmeric ¼ tsp
Chili powder 1 ½ tsp
Cumin powder ½ tsp
Yogurt ½ cup and keep aside
Cashew nuts 8
Ginger 2-inch piece
Green chilies 4
Garlic 6 cloves
Onion 1 large sliced
Water 2 cups
Chopped onion ¼ cup
Ginger garlic 1 tbsp
Cloves 4
Green chilies chopped 4
Cashew nuts 2
Oil ½ cup
Whole spices 1 tbsp
Mace 1 piece
Bay leaf 1
Grounded onion paste 2 tbsp
Coriander powder 2 tsp
Cayenne red chili powder ½ tsp
Allspice ½ tsp
Salt a pinch
Fresh cream 3 tbsp
Dried fenugreek leaves 1 tsp
Tomato puree 3 tbsp
METHOD
Marinate chicken with salt ½ tsp, turmeric ¼ tsp, chili powder 1 ½ tsp, cumin powder ½ tsp heaped, yogurt ½ cup, and mix well. Keep aside to marinate for half an hour. Boil water 2 cups, add in chopped onion, ginger garlic, cloves, green chilies, cashew nuts, and boil for 5 mins, remove, cool and blend into a paste. Heat oil ½ cup, add 1 tbsp whole spices, 1 piece mace, 1 bay leaf, add the grounded onion paste, fry for 5 mins on medium flame till oil comes on top, add coriander powder 2 tsp, Cayenne chili powder ½ tsp, allspice ½ tsp, tomato puree 3 tbsp, salt pinch, fry well on low flame for 5 mins, add marinated chicken, toss well in the masala for 5 mins, simmer on low heat for 5 mins, add ½ cup water, cover and cook till chicken tender and oil comes on top. Lastly add fresh cream 3 tbsp, dried fenugreek leaves 1 tsp, mix on low heat for 2 mins, serve with nan or paratha.

MINCE WITH HARA LASSAN
Ingredients
Chicken mince ½ kg coarsely crushed
Onion 1 cup chopped
Green chilies 3 chopped
Crushed coriander 1 tbsp
Crushed black pepper 1 ½ tsp
Salt 1 ½ tsp
Turmeric ½ tsp
Ginger garlic 1 tbsp
Green chili paste 1 tbsp
Eggs 3
Green garlic finely chopped 1 cup
Oil ½ cup
METHOD
Heat oil, add chopped onion, add ginger garlic paste, green chili paste, and add mince, fry well for 5 mins, add salt 1 ½ tsp, turmeric ½ tsp, 1 cup water, cover and cook till mince nearly done, open lid, add finely chopped 1 cup green garlic, add 1st egg, then 2nd egg and 3rd egg and add at different places, add ¼ cup on the eggs, cover and cook for 2 mins, stir the eggs well to mix, remove, serve with nan or paratha.
