CHICKEN AND CORN CHOWDER
Ingredients
Chicken thighs 250 gm
Chicken powder 1 tbsp
Onion chopped ½ cup
Chopped bell pepper ½
Olive oil 3 tbsp
Butter 2 tbsp
Chicken stock 6 cups
Jalapeno 2 tbsp
Paprika 1 tsp
Salt n pepper to taste
Garlic 3 cloves chopped
Flour ¼ cup
Corn 1 tin
Evaporate milk 1 tin
Cream ½ cup
Ingredients to Serve
Chopped jalapeno
Parsley
Siracha sauce
METHOD
In your stock add corn cobs, cook for 15 mins, marinate chicken pieces with chicken powder, salt, pepper and paprika. Heat olive oil in a fry pan and sauté chicken on high flame, take it out and add onion, salt, pepper to the same pan with chopped garlic, now add 2 tbsp butter, add stock and sautéed chicken, simmer for 20 mins, add in evaporated milk, simmer for 10 mins, season with salt and pepper, serve with cream, parsley, chopped jalapeno and siracha sauce.

PASTA IN BREAD BOWL
Ingredients for Cajun Spice Mix
Smoke paprika 1 tbsp
Garlic powder ½ tbsp
Onion powder ½ tbsp
Cayenne pepper ½ tbsp
Black pepper ½ tbsp
Mixed herbs ½ tbsp
Salt ½ tsp
[Mix together all the above and store in a clean jar.]
Ingredients for Pasta
Chicken 300 gm cut into small pcs, marinate with salt n pepper ½ tsp each, lemon juice 1 tbsp, garlic chopped 1 tsp, oil 2 tbsp, butter 50 gm,
Chopped garlic 1 tbsp
Steamed spinach ½ sautéed in 1 tbsp butter
Sun dried tomatoes finely chopped ½ cup
Chicken stock 2 ½ cups
Stock cube ½
Cream 1 cup
Grated cheddar cheese ½ cup
Onion powder ½ tsp
Cajun spice mix 1 tbsp
Finely chopped parsley 1 tbsp
Fresh basil chopped as required
Boiled pasta as required
Ingredients for Topping
Grated cheddar cheese
Cajun Spice to sprinkle
Chopped parsley
Bread bowls as required
Melted butter to brush the bowls
METHOD
Marinate chicken with salt, pepper and chopped garlic. Heat oil in a wok, fry chicken till done, remove chicken. To the same pan add butter and more garlic, immediately add in chicken stock with cream and all the rest of the ingredients for pasta including the cooked chicken, keep the pasta saucy and adjust the seasonings, fill each bread bowl with pasta and sauce, top it with shredded cheese, sprinkle cajun spice, chopped parsley on top, grill for 5 mins till cheese melts. Before serving the pasta in bread bowl, brush it inside out with melted butter, place it in the oven for 8 mins on 180 D, then fill the bowls and serve immediately.
