LEBANESE BREAD PUDDING

Ingredients

Bread slices 8
Butter 4-5 ounce

Ingredients for Sugar Syrup

Sugar 1 cup
Water ½ cup
Green cardamom 1
Rose essence few drops

Ingredients for Custard Layer

Milk 3 cups
Condensed milk ½ cup
Sugar 3 tbsp
Tetra pack cream ½ cup
Corn flour 4 tbsp
Milk powder 3 tbsp
Rose essence few drops
Whole dried milk ½ cup
Vanilla ice cream 3 scoops

For Topping

Pistachio toasted and chopped ½ cup

METHOD

Apply butter on both sides of bread, spread on a baking tray, bake on 180 D till crisp and golden, now grind bread slices to coarse crumbs, spread the crumbs in bottom of your dessert dish. Make sugar syrup by cooking together, sugar, cardamom and water, as soon as the sugar dissolves and syrup begins to thick, remove from heat and add essence, cool syrup, drizzle syrup over the bread layer evenly so it gets soaked out, make custard by beating together, milk, cream, condensed milk and corn flour. In a sauce pan, once the corn flour is dissolved in milk, put the pan on flame and cook on medium heat by stirring all the time, cook till custard thickens, add milk powder and rose essence, whisk well, once the custard cools, fold in khoya and ice cream, spread custard layer over bread layer, now put it in the dessert dish, top with a layer of toasted coarsely grounded pistachio, chill the dessert and serve.

WHITE SAUCE CHICKEN HANDI

Ingredients

Chicken cubes 500 gm cut into 2 inch cubes

For The Marination

Hung curd 3 tbsp
Tomato paste 2 tbsp
Oil 2 tbsp
Vinegar 2 tbsp
Salt ½ tsp
Chili powder 1 tbsp
Paprika 1 tsp
Roasted n crushed cumin 1 tsp
Black pepper 1 tsp
Chicken powder 1 tsp
Garlic powder 1 tsp
Ginger powder 1 tsp
Cinnamon powder ¼ tsp
Dried parsley 1 tsp
Oregano 1 tsp

METHOD

Marinate chicken with all the given ingredients for at least 4 hours. Heat oil 2 tbsp, add marinated chicken, fry well, then add in the prepared white sauce.

Ingredients for White Sauce

Butter 2 tbsp
Flour 2 tbsp
Milk 2 cups
Salt½ tsp
Blackpepper½ tsp
White pepper ½ tsp
Nutmeg ¼ tsp
Cheddar cheese or mozzarella cheese ½ cup

METHOD FOR SAUCE

Heat butter in a pan, add flour and cook, add milk, cook until thick, add all the dry ingredients and Remove from fire.

TO SERVE

Heat your sizzler, put prepared chicken, top with white sauce, then grated cheddar and mozzarella, cover for 5 mins till cheese melts in the oven, you can serve this in a handi too by putting chicken, top with sauce, cheese, and leave it on dum till cheese melts.
