Out of curiosity. Why not sear the steak first then put it on the cooler side to finish?

Have you ever had any issues with hot coals or embers falling out of your ash bucket and landing on your deck? I've hesitated using my kettle grill since I moved and now have a back porch, so I just use my gas grill. But I do prefer the flavor of charcoal, I just don't want to light the deck on fire. 🙂

I've grilled for 45 years year 'round (including winters here in the Midwest) and have tried a lot of different ways to grill. I keep circling back to Weber charcoal grills.

I used to use gas grills but when my last one fell apart I bought a 22" Weber. I will never go back. Have you ever had to swap LP tanks in the middle of a meal? No thanks! I always know how much charcoal I have. I also cook in the winter. Gas does not get as hot in cold weather as it does in warm. Charcoal doesn't care. A thermometer on the lid of any grill is totally inaccurate by 50 to 75 degrees. If you want to maintain a certain temperature get a cheap oven thermometer (not a MEAT thermometer) and put it on the grate next to the food.

I am not new to the grill but this video still taught me a lot!
Anybody that has had a steak, done up right, over some Kingsford charcoal will tell you quick, that no gas grilled, pan seared or oven cooked steak, compares to one done up right, over charcoal. Cooking meat over a real fire is something special and your taste buds can tell it, right away.

What about cleaning the grill before throwing the meat on? Man that grill surface was filthy!!!! Never used a chimney before. Kind of surprised you didn't have to use charcoal lighter fluid. If you don't have a chimney, you definitely have to use charcoal lighter fluid if using Kingsford basic briquettes.

I've messed around with Kettle grills with okay results.. But picked up a used performer deluxe for $100 and time to get serious on using this thing correct!

I love to grill. Everything from steak to fish! I was not sure how to use the vents. My dumb ass thought to close the vents for more heat haha!
Also, the paper towel with oil is also new to me. I was crumpling up newspaper and putting it at the bottom of my chimney! Another dumb move on my part.
Also the thermometer! I thought it was for the whole grill, but you are saying the thermometer is for the one area only!
