Oil for frying
3 potatoes
1 Roma tomato
1/4 onion
1 lb ground beef
1 tsp garlic salt
1 tsp black pepper
1 tsp chili powder
1/2 tsp ground cumin
Salt I used 3/4 tsp

  1. I honestly have been in a rut of making the same things over and over. I have a kid on the spectrum that is very picky, so we just kind of fell into a rut of sameness. I feel super inspired to try many of these recipes! I think my kiddos would actually eat!

  2. My mom introduced us to ground beef and potato tacos shortly after she started working part-time in my elementary school cafeteria. I don't remember tacos being served for lunch, but at that time I brown-bagged it. My parents are from Michigan, moved to New Mexico when I was 6 weeks old. I consider myself NM raised and am proud of this state's unique food and traditions. One more thing I wish to say is that I value all culture's definitions of their food, traditions, how they grow and use the food they grow. Let us all learn.

    Maybe look at getting a Ricer, they act like a big garlic press when you put the potatoes through it they come out as the most beautifully smooth mashed potatoes ever. Very inexpensive and saves a ton of time.
