MELON MASTANI – DESSERT WITH NO ADDED SUGAR
If you see musk melon but usually don’t buy it; you are missing out many health benefits. Melon strengthens Immune system, good for vision & for cardiovascular health, also prevents diabetic nephropathy & cancer, beneficial to pregnant women and is also considered good for lungs.. it is actually a super fruit the way I see it. So make sure you have plenty of musk melon this season. I had tasted this dessert during my trip in Asian countries. Of course, have modified it a bit per Indian taste and sensibilities. Just amazing; enjoy chilled. Recipe is so easy-
– in a pan, take water and boil soaked sabudana (soaked for 4 hours) sabudana. Should boil them till they become transparent.
– drain out water and keep them aside to cool down
– cut musk melon and in a mixer make puree
– now take coconut milk (you may take any other non dairy milk too) and add melon puree
– add honey per your taste- you could also add any other sugar syrup or substitute to sweeten it
– mix nicely
– add sabudana (saggo) and some cashews
– mix and keep in fridge; you will enjoy this chilled dessert even more
– while serving in a glass, take some musk melon pieces & cashews; and then fill the glass with this Melon Mastani which should be cold. It’s a unique dessert tor Summer so make and could keep in fridge easily for minimum 2 days.
