Meethi Seviyan (Sweet Vermicelli)
Ingredients
Vermicelli (Seviyan)- 1 cup(thick variety)
Ghee- 2 tbsp
Pistachios (sliced)- 8-10
Cashews (halved )- 7-8
Almonds (sliced)- 7-8
Rock sugar(crushed) – 3- 4 tbsp
Cardamom powder – ½ tsp
Hot Water – 3 cups
Method:-
– Heat ghee in a deep pan over medium heat. Add all the nuts and toast till golden brown.
– Once done, transfer on a plate with the help of a perforated spatula.
– Now, in the same kadhai, add the vermicelli and roast till deep brown in colour.
– Add hot water and allow the seviyan to cook till all the moisture evaporates.
– Meanwhile, crush the rock sugar with the help of a mortar pestle (you can also grind in a mixer grinder) & add to the seviyan. Stir, till the sugar melts completely.
– Now add the cardamom powder and mix it all together.
– Finally, add the toasted nuts, give it a toss and transfer to a serving bowl.
– Enjoy it piping hot or at room temperature. It taste delicious either ways.
