Mint Pesto Pasta Recipe:
For The Mint Coriander Pesto:
Mint – 1 Cup
Coriander Leaves – 1 Cup
Peanuts – 2 tbsp
Green Chilli – 1 no
Garlic – 2 nos
Salt – ¼ tsp
Chaat Masala – ¼ tsp
Lemon Juice – ½ tsp
Olive Oil – ¼ Cup
Processed Cheese (grated) – 1 tbsp
For Making The Pasta:
Macaroni Pasta – 1 Cup
Garlic (sliced) – 4 nos
Onion (thinly sliced) – 1 no
Mushroom (thinly sliced) – ½ Cup
Tomato (thinly sliced) – 1 no
Processed Cheese (grated) – For Garnish
Salt – ½ tsp
Black Pepper Powder – ½ tsp
Oil – 2 tbsp + 1 tbsp
Cooking Instructions:
1. Combine the ingredients for the mint coriander pesto in a mixer blender, without the cheese. Pulse blend until coarse. Add the cheese and mix well. Set aside.
2. Boil water in a pot with salt and 1 tbsp oil. Add the pasta and cook, until tender about 10 minutes. Drain, coat in oil and set aside. Retain a cup of the pasta water.
3. In a pan, heat oil over medium, add the sliced garlic and brown them, about 2 minutes.
4. Add the sliced onions and mushroom, saute until tender.
5. Add the pesto paste as required and pasta water, add the pasta and toss well to coat.
6. Add tomatoes and toss.
7. Transfer to a bowl and garnish with grated cheese.
Cooking Tips:
1. Do not over boil the pasta, it will disfigure while tossing.
