@chudsbbq I see you use that small metal plate beneath a pan on your wood counter to cook all the time. What is going on there? How does one do that? What is the heat source?

Looks tasty. We call it a pepporcini roast where I come from. We always eat it on a hoagie bun. But I make a sauce that is sour cream and horseradish to taste. It is delicious!
