oil
3 – 4 lbs chuck pot roast
1 packet au jus gravy
1 packet ranch seasoning mix
1/2 – 1stick butter
8-10 pepperoncini peppers
2-3 tbs pepperoncini pepper juice from the jar
1 med-large yellow onion sliced
2 tbs garlic chopped or minced
4 cups beef broth
Preheat the oven to 425F
Add oil to a medium to large-sized dutch oven.
Sear the pot roast on all sides, remove, and set aside on a plate.
Add more oil if necessary, along with the onions. Saute until the onions become translucent.
Add the garlic and combine for about one minute.
Add the beef broth, au jus gravy, and ranch seasoning mix, pepperoncini juice, and combine.
Add the pot roast, pepperoncini peppers, and butter.
Cover with a lid, place into the oven, and bake for about 1 1/2 – 2 hours or until the beef is fork-tender.
*Add more liquid if necessary during the cooking process.

I've made this now three times since I discovered this video and wanted to leave another comment about my experiences. For starters, this is so delicious it is the best dish I can make! I've done twice in the Dutch oven and once in the slow cooker. The slow cooker may take longer, but I prefer that method. The first time I used the Dutch it fell apart easily, the second time it came out tough as a shoe. I take full responsibility, I went off the tracks somewhere. I've used the crock pot over the years and everything always falls apart coming out of that. So I tried that method today in my quest for redemption and it was perfect! Not to mention safer. I'm not used to sticking the Dutch in the oven, and once grabbed the lid without a glove after it came out of the oven. I made sure not to make that same mistake again!
I must say this was so delicious I think I ate the whole thing myself. I made this twice and this will definitely be our staple for any gathering. Thank You!!!

Ok so I made this a few months ago when my neighbor gave me some chuck roast beef and had no idea what to do with it since I’m not well versed in the kitchen and LET ME TELL YOU! This was easy to follow and one of the best dishes I’ve made so far, my husband and I LOVED it. BUT it did take a long time to make but it definitely was worth it

I’ve cooked this so many times, I used all the ingredients except for the broth and garlic and it always is delicious 😋 I do add potatoes and carrots to mine! So good either way!
If I am using a roast that’s almost a pound and a half, do I cook it for half the cooking time?

If you want a little kick!! I suggest using the spicy ranch seasoning and using mezzetta hot chili peppers instead of the pepperoncini!! It just gives it a nice kick!!
