Baked oats is trending right now, but if you make it wrong it will taste like cardboard. Here is how I made Moist Chocolate Cake with Oatmeal. You first have to blend the oatmeal until it’s really fine and to keep it moist I add mashed banana and coconut oil.

INGREDIENTS
1 cup rolled oats
¼ cup cocoa powder
1 tsp. baking powder
1 mashed banana
1 egg
1 tsp. vanilla extract
¼ cup coconut oil
¼ cup maple syrup
½ cup of dark chocolate chips
INSTRUCTIONS
Blend oats until fine.
Then add cocoa powder, baking powder, mashed banana, egg, vanilla extract, coconut oil and maple syrup.
Blend until batter is thick and creamy.
Spray Ramekins with oil and pour in batter ½ way filled, top with a handful of chocolate chips and top with a little more batter.
Bake at 350˚F degrees for 20 minutes

  1. Okay, so I don't have an oven and tried it in the microwave. Plus, in place of maple syrup, I used honey. Within 6 minutes it puffed up and sort of became like a sponge cake. It was a little dry for my taste, probably a bit overcooked. So I glazed it with some diluted jaggery syrup and it tastes absolutely delicious now. It just melts in the mouth. Everyone loved it. Lots of thanks for this wonderful recipe !!
