  1. RECIPE:
    For the Beef Marinade:
    * 1lb (450g) flank steak, thinly sliced against the grain
    * 1 tbsp soy sauce
    * 1 tbsp Shaoxing wine (or dry sherry)
    * 1 tbsp cornstarch
    * 1/2 tsp baking soda (for extra tenderness
    * 1 tbsp neutral oil (for velveting)
    For the Sauce:
    * 2 tbsp soy sauce
    * 1 tbsp dark soy sauce (for color & depth)
    * 1/4 cup water or beef broth
    * 2 tbsp brown sugar or honey)
    * 1 tbsp oyster sauce
    * 1 tsp hoisin sauce
    * 1 tsp cornstarch (to thicken)

    For the Stir-Fry:
    * 2 cloves garlic, minced
    * 1-inch piece ginger, julienned
    * 3 green onions, cut into 2-inch pieces
    * 1/2 small white onion, sliced
    * 1/2 tsp crushed red pepper flakes (optional for heat)
    * Toasted sesame seeds (for garnish)
