Juicy Kotleti – My Great-Grandmother’s Recipe!
This recipe has been passed down through generations, bringing warmth and comfort to every meal. These kotleti are crispy on the outside, incredibly juicy inside, and full of rich flavor.
Ingredients:
• 2 lbs ground pork
• 1 egg
• 1 onion
• 4-6 garlic cloves
• 2 tbsp semolina
• 4 tbsp water
• Salt & pepper to taste
• Oil for frying
Instructions:
• Prepare the Semolina: Soak 2 tablespoons of semolina in 4 tablespoons of water and set aside. This helps keep the kotleti tender.
• Blend the Aromatics: In a blender, combine the onion, garlic, and egg. Blend until smooth.
• Mix the Meat: In a bowl, add the blended mixture to the ground pork. Season with salt and pepper to taste. Add the soaked semolina mixture and mix well. Let the meat rest for 10 minutes.
• Shape & Fry: Form the mixture into oval-shaped patties. Heat oil in a pan over medium heat and fry the kotleti for about 2 minutes per side until golden brown. Transfer them to a separate pan.
• Steam for Extra Juiciness: Once all kotleti are fried, add a splash of water to the pan, cover with a lid, and steam on high heat for 5-7 minutes. This locks in moisture and ensures they stay tender.
• Serve & Enjoy: Let them rest for a few minutes, then serve warm with your favorite sides—mashed potatoes, buckwheat, or a fresh salad.
