Just recived my bread book, many many thanks! It's sent me way down the rabbit hole of hydration. I've been making bread for over 60 years and never given hydration a thought, my standard mix when the family was at home was 3lb flour 30oz water. This appears to give a 70% hydration, ie sticky, now I have to work out why it was not sticky!! Back to it, with smaller mixes, thanks so much.

I just had to let you know that I've now baked 7 of your FANTASTIC bread recipes from your new book. And each one has been a TREMENDOUS SUCCESS!!! I've NEVER had any luck with bread making (which IS shameful, for someone who comes from a very long line of professional bakers and flour confectioners!!!!)
