You failed. NO VINEGAR! Let it ferment naturally with salt and dont dispose the juices.. They are healthy and good for you.

It was all looking healthy till you added sugar haha that alone just tore down any benefits from the other ingredients. A great sugar alternative is allulose.

Just tried this recipe.. it was good, but there was a pool of sauce left. I think you could get the same result reducing the rice vinegar and sesame oil

This is seasoned cucumber. It's close to salad, side dish. We don't use vinegar for kimchi. It happens naturally as it ferments.
