  1. Publix Supermarkets sometime carry a “limited edition” Buffalo blue cheese sausage/brat. Have you tried it? I’d love to see you riff on this as I think they are seriously some of the best sausages I’ve ever had.

  2. Just put 10lbs in the fridge to bloom, will go on the smoker (hot at 180F, no cure) tomorrow. I did 65% pork shoulder and 35% tri-tip beef just cause that's what was on sale ($1.49/lb pork-yes!). I did 10lbs of meat and got 28 sausages using 32-35MM Hog casings. I just used Chuds spice bags without mods to establish a baseline, will probably add some stuff next time.
    Stuffed all without a single blowout! Soaked the casings for 3 hours and then rinsed them out (LEM).

  3. Question in a 5# batch of sausage mix how much high heat cheese do I add and what is the pink salt for I got my 5 bags now I’m gonna start my journey. Is brisket best choice of beef for the sausage and to make it more beefy obvious more beef correct say 4/1 mix beef 4/pork 1# would be ok right
