This is my spin on Pasta Alio e Olio – or pasta with garlic and oil – a classic Italian dish that’s super easy to make!
To add more flavor to this classic, I started off by searing some Italian seasoned chicken breast tenderloins in a pan, then deglazing that pan with some white cooking wine before adding the garlic and some butter to get my sauce started. Then adding thin spaghetti cooked to one minute less than al dente right to the pan and tossing it around to coat with the sauce just adds a ton of flavor! Adding in some of that salty and starchy pasta water helps to emulsify that sauce to give a rich and flavorful sauce that clings to the noodles beautifully. Finish with a drizzle of Graza Drizzle finishing oil and some freshly grated parmesan cheese, plating it up with the sliced chicken and some crispy garlic bread, and you’ve got an epic meal in less than 30 minutes!
