I live in North Carolina and have worked in South Carolina for over 15 years and I can say that coworkers from
South Carolina are somewhat secretive about the details of hash.

I grew up in South Carolina. I had Shealy's BBQ pork hash over rice more times than I can count as it was one of my favorites. I've also had it from Maurice's Piggy Park in West Columbia but Shealy's is better. Piggy Park is the place to go for ribs though. I've made this dish countless times using pork shoulder or beef chuck roast. I have never felt the need to add liver or any other additional meats to it. Just the primary meat, spices and sauce over rice. That's all it really needs to be delicious every time.

I’m going to try this, but I’ll “keto-ize” it by a) using “brown sugar” Stevia, and b) serving it over cabbage “noodles” instead of rice.

I'm going to skip the liver. I'm sure it will be just as good without. A lot of recipes I found just used the pork shoulder or butt as the only meat.
I will try this only if I don't make it because I don't want to know about the liver.
