Not going to call you a sell out, but you know what. Not cool. So how about you share the list of ingredients for all of these rubs and let those who want to make their own, can. Otherwise, the rest will buy from you.
Without having tried it myself, best guess for why the chicken is juicier is acid. When you put together your own rub at home you're probably not including anything like citric acid or vinegar powder. By adding some with salt and leaving it for a while, it will dissolve in the drawn out water and form a thin layer of marinade. Even if I'm wrong, acid generally makes things taste better, so good choice adding some either way

May I suggest no sodium options for these rubs? I’d like to try them but like some I’d like to be in control of the salt. Especially if I want to do a dry brine on something.
