Ingredients:
Prepare Paneer Masala:
-Tomato ketchup 2 tbs
-Himalayan pink salt ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Cornflour 2 tbs
-Cottage cheese 400g
-Cooking oil 3 tbs
Prepare Chilli Paneer:
-Mustard paste 1 tsp
-Lal mirch (Red chilli) crushed ½ tsp
-Lemon juice ½ tbs
-Hari mirch (Green chillies) 5-6
-Cornflour as required
-Cooking oil 3 tbs
Prepare Fried Rice:
-Cooking oil 3 tbs
-Adrak (Ginger) chopped 1 tsp
-Lehsan (Garlic) chopped ½ tbs
-Shimla mirch (Capsicum) julienne ½ Cup
-Gajar (Carrot) julienne ½ Cup
-Corn kernels boiled ½ Cup
-Band gobhi (Cabbage) shredded 1 Cup
-Chawal (Rice) sella 2 Cups boiled
-Sirka (Vinegar) 1 & ½ tbs
-Soy sauce 2 tbs
-Dark soy sauce 1 & ½ tsp (optional)
-Kali mirch powder (Black pepper powder) 1 tsp
-Himalayan pink salt to taste
-Safed mirch powder (White pepper powder) ½ tsp
-Hara pyaz (Spring onion) chopped handful
Directions:
Prepare Paneer Masala:
-In a bowl,add tomato ketchup,pink salt,black pepper powder,red chilli powder,cornflour,mix well & set aside.
-Cut cottage cheese into 1-inch cubes,separate cheese cubes & trimmed edges.
-In a bowl,add cottage cheese cubes,prepared paneer masala (reserve 1 tbs for later use) & coat well.
-In a frying pan,heat cooking oil & fry cheese cubes on medium flame from all sides until golden brown & set aside.
Prepare Chilli Paneer:
-In reserved paneer masala (1 tbs),add trimmed edges of cottage cheese (approx. ½ Cup),mustard paste,red chilli crushed,lemon juice & mix until well combined.
-Cut green chillies in half,deseed & stuff with prepared paneer masala & sprinkle cornflour.
-In a frying pan,heat cooking oil & shallow fry stuffed green chillies on medium flame from both sides until golden brown & set aside.
Prepare Fried Rice:
-In a wok,add cooking oil,ginger,garlic & sauté for a minute.
-Add capsicum,carrot,corn kernels,cabbage & mix well.
-Add rice & mix well.
-Add vinegar,soy sauce,dark soy sauce,black pepper powder,pink salt,white pepper powder,spring onion & mix well.
-Add fried cheese cubes & mix gently.
-Garnish with fried cheese chillies & serve!
