Slow Cooker Chicken Tikka Masala
1 onion, chopped
2T veg oil
1 chile, seeded and diced
2T tomato paste
4tsp Garam Masala
3 garlic cloves, minced
1T grated ginger
2tsp sugar
Salt and pepper
1 14.5 ounce can diced tomatoes, drained
2 lbs boneless skinless chicken, cut into 1 inch pieces
ΒΎ cup plain whole milk yogurt
ΒΌ cup chopped cilantro
Microwave onion, oil, chile, tomato paste, garam masala, garlic, ginger, sugar, and Β½ tsp salt in a bowl for about 5 mins stirring occasionally. Place in slow cooker, stir in tomatoes and chicken. Season with salt and pepper. Cover and cook for 2-3 hours on low. Whisk Β½ cup sauce in a separate bowl with yogurt and return to slow cooker. Garnish with cilantro, serve with rice and naan.
Greek Chicken with Warm Tabouleh
1 cup bulgur wheat, rinsed
1 cup chicken broth
Salt and pepper
3T olive oil
4tsp minced fresh oregano
1.5tsp lemon zest plus 3T juice
1 garlic clove, minced
4 bone in chicken breasts
Β½ cup plain Greek yogurt
Β½ cup minced parsley
3T water
8 oz cherry tomatoes, halved
Coat slow cooker with cooking spray. Combine bulgur, broth and ΒΌ tsp salt in slow cooker. Microwave 1T oil, 1T oregano, 1 tsp lemon zest, garlic, salt and pepper for 30 seconds. Rub chicken with mixture and place on top of bulgur. Cook for 2-3 hrs until cooked through. Combine yogurt, 1T parsley, water, remaining oregano and lemon zest in bowl. Season with salt. Transfer chicken to serving dish and stir tomatoes, lemon juice and remaining parsley to slow cooker. Season with salt and pepper. Serve with chicken and yogurt sauce.
Sweet and Tangy Pulled Chicken
1 onion, chopped
ΒΌ cup tomato paste
1T chili powder
1T veg oil
1tsp paprika
Salt and pepper
1/8 tsp cayenne
ΒΌ cup ketchup
2T molasses
1.5 lb chicken breast
2T cider vinegar
2tsp Dijon mustard
Buns
Microwave onion β cayenne for 5 minutes. Transfer to slow cooker with chicken. Cook for 2-3 hrs on low. Remove chicken and shred. Stir vinegar and mustard into sauce, return chicken. Serve.

Loved this video and I ordered this cookbook after watching it! I tend to shy away from slow cooker recipes because I donβt care for the cream of whatever soups, and mushy results that happen after most slow cooker meals. But this cookbook may be a game changer!
