Spicy Chicken Sandwich
Marinade
2 chicken breasts
1 cup buttermilk
1 tbsp hot sauce (or pickle juice)
1/2 tsp each paprika, chili powder, garlic powder, black pepper, salt
Breading
1 cup flour
1/2 cup corn starch
1 tsp each paprika, chili powder, garlic powder, black pepper, salt
Purple coleslaw
1/2 red cabbage
1 tbsp sugar
1 tsp salt
1/4 cup olive oil
Juice from 1 lemon
1 leek + pinch of flour
Spicy oil
1/2 cup hot oil
4-6 tbsp cayenne pepper
1 tsp paprika
1 tsp brown sugar
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp salt
Spicy Mayo
Mayo + Hot Sauce 2:1
Burger buns
Swiss cheese
Cut chicken breast in half, pound and marinade for 2 hours. Then coat in bread mixture (press chicken down, don’t be shy) Fry for 4-6 min until golden. Fry leeks for 30-50 seconds. Poor hot oil into cayenne spice mix and brush the chicken. D
Thinly slice cabbage, add sugar and salt. Toss, and let it seat on a colander about 1-2 hours. Then remove exceed moisture add oil and lemon juice and mix well.
Assemble: Burger bun-spicy mayo-chicken-cheese-coleslaw-fried leeks-bun
