It's usually the time set for the marinate… if it's not long enough it wouldn't taste as expected.

Marinade fish in ginger garlic and some spices let it set for 2 hours then pound your peppers , scotch bonnet, cayenne pepper garlic and ginger with olive oil or atilli oil wrapped in foil ad grill for 40 minutes let me know
