These no-bake vegan cheesecake bites are creamy, sweet, and satisfying without being heavy. Made with a date-nut crust and cashew coconut filling, they’re the perfect dairy-free dessert to keep in your freezer for a quick treat. The best part? You can make them in a muffin tin for individual bites—or in a round pan to slice like a classic cheesecake.
👉 Try them with fun toppings like caramel + chocolate chunks, kiwi + lime, or fresh mango for a tropical twist.
