Chicken Pulao Recipe – How To Make Chicken Pulao – One Pot Chicken & Rice

Ingredients – Serves 5 to 6
For Marinating the Chicken:
1 whole chicken (skin-on, bone-in), cut into pieces (1068 gm)
¼ tsp crushed black pepper
1 tbsp / 15 gm garlic paste
1 tbsp fresh lemon juice

For the Pulao Masala:
1 tbsp coriander seeds
2 tsp fennel seeds
½ tsp black peppercorns
6 green cardamoms
6 cloves
1 blade of mace (or ½ tsp ground mace)
A pinch of nutmeg (or ¼ tsp ground nutmeg)

Main Ingredients:
400 gm / 2 cups Basmati rice, rinsed and soaked for 30 mins
100g plain Greek yogurt (or regular yogurt)
¼ cup oil (I used olive oil – feel free to use your preferred one)
2–3 small to medium potatoes, peeled and cut into halves (optional)
3 dried red chillies
2 bay leaves
1 tsp shahi jeera (or regular cumin seeds)
4 green cardamoms
1 black cardamom
A small cinnamon stick
2 large onions, thinly sliced
¼ tsp salt (for the onions)
45 gm / 2 tbsp ginger garlic paste
2 tsp salt (for chicken – adjust to taste)
1 medium carrot, cut into chunky pieces (optional)
200 ml / 1 cup hot water
450 ml / 2 cups chicken broth (use the same cup used to measure rice)
2–3 whole green chillies
A handful of chopped coriander leaves
A few fresh mint leaves (optional)
2 tsp lemon juice
1 small tomato, sliced (for garnish)
2 tbsp ghee
¼ cup frozen green beans (optional)

  2. Your technique here is flawless with this dish. Your use of ingredients is knowledgeable, especially using chicken WITH bones. 10 out of 10. The only issue I could possibly have is the use of carrots here. I would omit them, but if served to me this way, I would eat them glady.

    The addition of a chicken stock cube takes this to another level
    I love that you give permission to make this ours. I have put in what veggies i had in my fridge and garden
