Serves – 4

Ingredients –

Chicken Seasoning –

750g (1.65lbs) – Chicken Thigh, Boneless & Skinless
1/2 tsp (0.5g) – Dried Basil
1/2 tsp (0.5g) – Dried Thyme
1 tsp (2.5g) – Onion Powder
1 tsp (2.5g) – Garlic Powder
Seasoning To Taste

Sauce & Pasta –

1 Tbsp (14g) – Unsalted Butter
2 tsp (10ml) – Olive Oil
1 – Brown (Yellow) Onion, Diced
5 – Garlic Cloves, Minced
1/4 Cup (60ml) – White Wine (Substitute For Chicken Stock)
200g (7.05oz) – Swiss Brown Mushrooms (Cremini), Thinly Sliced
1 litre (4 Cups) – Chicken Stock
500ml (2 Cups) – Thickened Cream (Whipping/Heavy Cream)
350g (12.3oz) – Penne Or Pasta Of Choice
40g (1.4oz) – Parmigiano Reggiano Cheese, Freshly Grated
5g (0.2oz) – Flat Leaf Parsley, Roughly Chopped (Optional)
120g (4.2oz) – Baby Spinach (Optional)
Seasoning To Taste

Garnish & Serving –

Parmigiano Reggiano Cheese, Freshly Grated
Extra Virgin Olive Oil (EVOO)
Cracked Black Pepper

Notes –

To store this pasta, place it in the fridge for up to 3 days. It can be frozen but isn’t recommended due to the cream content and will potentially split upon reheating. It can be frozen for up to 4 months if need be.

To reheat, either place it back into a pot or pan and gently heat it over medium heat until hot (10 minutes) or place it into a microwave in bursts. If you heat it in a microwave be careful of the harsh uneven heat as it will split the sauce, mix it around every 30 seconds to prevent this.

  2. "save it for a stock" the amount of onions you would have to process to add it to a "stock" would be dozens… yikes dude come on.

    Also why are you cooking mushrooms like that? they're raw. you gotta cook those things by themselves for at least 20 minutes to cook all the water out of them and get actual mushroom flavor.

    Your spinach is also raw… that stuff needs to cook for several minutes at least.

    if anyone replicates your dish exactly as you did it there would be some seriously overcooked onions and garlic, along with raw mushrooms and spinach.
