  1. Mexican Beef Skillet

    •2lbs ground beef
    •1 cup onions
    •1 cup bell pepper
    • 2 garlic cloves- minced
    •1 can tomato sauce 8 ox
    •1 can Mexican rotel
    •1 can green chiles 4 oz
    •1 can black beans- drained
    •1 tablespoon taco seasoning
    •1 cup uncooked minute rice
    • 3-4 cups Beef broth
    •1 cup Mozzarella Cheese

    Brown ground beef,season with black pepper, Cavender seasoning ,Lawry’s seasoning, salt. Drain and Remove from skillet. In same skillet sautéed bell pepper and onion. Add garlic. Add tomato sauce, rotel, and green chiles. Bring to a simmer. Add ground beef, black beans, taco seasoning. Stir well. Add rice, slightly cover with beef broth and stir. Cover and simmer until broth cooks out. Fluff rice and top with cheese!
