One Rotisserie Chicken = 4 More Easy Budget Meals (this time with Bacon!)



Ever since my last rotisserie chicken series, I’ve been hooked on finding new ways to turn one store-bought chicken into four completely different meals. This week, we’re doing it again — but with a twist: bacon is in (and we’re using every bit of it)!

These four dinners are low-effort, budget-friendly, and use overlapping ingredients to keep costs down. Perfect for busy weeknights, especially if you’re trying to stretch your grocery budget without sacrificing flavor.

Here’s what I made this week:

Meal 1: Creamy Chicken Bacon Tomato Pasta

I started by chopping and frying a full pack of bacon. I set the bacon crumbles aside and saved the fat — we’ll use both in this meal and later ones. Then I chopped half an onion and sautéed it in a saucepan with about 2 cups of water and the chicken leg and thigh quarters. I let those simmer until the meat was falling off the bone (about 10 minutes), then removed the chicken and shredded it.

To that same pot, I added 1 cup of milk, 2 tablespoons of the bacon fat, and 2 boxes of Parmesan-style Pasta Roni. I cooked it according to the box instructions, and about halfway through, I stirred in the shredded chicken and a handful of diced tomatoes (drained). Once the pasta was done, I topped everything with the bacon crumbles and a little extra parmesan. Creamy, quick, and super filling.

Meal 2: Chicken Bacon Ranch Pizza

For this one, I used a prepared pizza crust and spread it with ranch dressing instead of pizza sauce. I chopped one of the chicken breasts from the rotisserie chicken and layered it over the ranch. Then I added shredded mozzarella cheese, diced tomatoes, and some of the leftover bacon crumbles. Baked it according to the crust directions (usually 14-16 minutes at 400°F) until bubbly and golden. It’s super flavorful and a great way to use the same ingredients in a different way.

Meal 3: Chopped Caesar Sandwich

This one is super fast. I used other chicken breast, a Caesar salad kit, and the rest of the bacon, chopped up. I chopped everything pretty finely to make it easier to pile on a sandwich. Served it on a toasted sub roll, but you could also use hamburger buns or whatever bread you have. It’s fresh, creamy, and comes together in 5 minutes.

Meal 4: Shortcut Chicken Noodle Soup

I used the chicken carcass to make a quick homemade stock — just covered it with water in a pot and let it simmer for about 30–40 minutes. While that cooked, I chopped a few baby carrots, a celery stalk, and the other half of the onion from Meal 1. I sautéed the veggies in a little bit of the leftover bacon fat until softened. Then I strained the stock, added it to the pot (about 6 cups), and brought it to a simmer.

For the noodles, I added one packet of Knorr chicken-flavored pasta, it’s meant to be a side dish, but it makes an amazing quick noodle soup. I let it cook for about 7 minutes, then stirred in the last bits of shredded chicken I pulled from the carcass. I served it with crackers on the side for a warm, budget-friendly meal.

Grocery List for All 4 Meals

Things You’ll Probably Need to Buy:

1 rotisserie chicken

1 pack of bacon

1 yellow onion

2 boxes Parmesan-style Pasta Roni

1 can diced tomatoes or a few fresh tomatoes

1 cup milk (or buy a small container)

1 prepared pizza crust (like pizza buddy or a canned pizza crust)

Ranch dressing

Shredded mozzarella cheese

1 Caesar salad kit

1 loaf of french bread or sub rolls

Carrots

Celery

1 Knorr chicken-flavored pasta packet

Crackers (optional, for soup night)

Pantry/Fridge Items You Might Already Have:

Salt & pepper

Butter or oil (optional, if not using bacon fat)

Parmesan cheese (can use packet from salad kit)

These meals are realistic, flexible, and most importantly — tasty without being expensive. I hope this gives you a few new ideas to stretch your rotisserie chicken a little further and avoid food waste while still keeping things fun.

  2. I don't think there's a time when we don't pick up the biggest $5 rotisserie chicken we can find when we go to Costco-which is more often than I'd like to admit! But like you, I try to use every bit of it, whether making chicken salad sandwiches, chicken Caesar wraps, pasta/ramen, soup…and of course we use the bones and bits of chicken to make soups or just stock (we put the extras in the freezer, fill up crackpots, and then pressure can ours in batches – it's so yummy!) I'm so glad to see some recipes here that I've not tried, so this is a great series! Thank you!

  3. Try this cold salad❤1 box of macaroni, cook ahead set aside❤ mix mayo,ranch dressing,pickle juice,1tbs, olive juice 1 tbs dice small, tomatoes,pickles,cukes, bacon. Olives, dash of black pepper, mix add to pasta gently stir in. Chill❤add cubes rotisorie chicken, i use 1 breast .❤❤

  4. I sometimes use the whole chicken to Make what we call chicken surprise. First you mix a can of cream of mushroom soup with some sour cream, debone the chicken and chop into bite-size pieces, mix the chicken up with the cream of mushroom soup mixture and put into casserole dish top
    this with prepared stove top stuffing and big in the oven until the sauce is bubbly and the stuffing is golden brown. Also if you like bacon with your pasta you will love pancetta

  5. Chicken stew. Take the Croutons and make crusty cheesy chicken will a side of mashed potatoes and another veggie. FYI take mashed croutons cheddar or Colby jack mix with butter put on top of chicken seasoned with season salt and salt and pepper to taste.
