Ingredients:
1 cup onion, sliced thin
4 Tbsp butter
1 box Jiffy Corn Muffin mix
1 egg
1/3 cup milk
8 oz creamed corn
1 cup sour cream
1 cup cheddar cheese, shredded
optional: 4 oz can diced green chilis

Directions:
Preheat oven to 400 degrees.
Saute thinly sliced onion in 4 Tbsp butter until softened. Set aside to cool while you combine other ingredients. In a large bowl, mix together Jiffy Corn Muffin mix, egg, milk, corn, and cheese. Set aside. In the pan with the onions, add the sour cream and mix well. Add to corn muffin mix. Stir together until well mixed.
Spray an 8X8 pan with non-stick cooking spray. Pour mixture into the pan. Bake in preheated oven 35-40 minutes or until bread is done.
