INGREDIENTS (serves 2-3 persons)
300g of fresh filleted fish of your choice.
12 fresh mussels
9 Large prawns
2 teaspoons of fresh crushed garlic
1 teaspoon of fresh grated ginger
1 cup of chopped spring inion
Half a cup of freshly chopped flat leaf parsley
half a cup of fresh cream
2 table spoons of olive oil
1 table spoon of butter
salt & pepper to taste
Fresh pasta for 3
METHOD:
1. De-scale and fillet the fish
2. Use the left over fish bones to boil up some fish stock. (1 litre)
3. Steam open the mussels. Clean mussels from shell.
4. De-vain the prawns.
5. Chop up the spring onion, crush the garlic and mince the ginger.
6. Cook the pasta in the fish stock for added seafood flavor.
SEAFOOD SAUCE:
7. Fry the garlic, ginger in the butter and olive oil on medium heat for 2-3 minutes.
8. Add the fish fillet pieces and fry on medium heat for 1-2 minutes.
9. Add the prawns and cook for a further minute.
10. Add the steamed mussels, chopped spring onion and parsley. Cook for another minute.
11. Add the fresh cream, stir and cook for another minute. Reduce the heat to a simmer.
PLATING:
12. Strain the cooked pasta.
13. Add the Seafood sauce and stir well.
14. Plate up and serve with fresh parsley and parmesan cheese.
