I can only find Danish and Swedish fontina at my local stores. What would be a good substitute for the Italian fontina you call for?

Love!!! I recommend you make sure your baking dish is indeed 9" x 13". Otherwise you will run out of layers/ingredients. It takes time but so worth it and it freezes great!
No boil noodles puff up, loose their density and have no bite.

Not enough cheese
I mix ricotta and cottage cheese together for mine also for stuffed shells
Sugar, oregano, and cottage cheese in lasagna. This is an abomination – a tawdry, filthy, rapey assault against all that is right and just.
This one isn't good. Everything else I have tried from America's Test Kitchen has been great.. but this one isn't. It would make an awesome doorstop… And yes I can cook…. For no disappointment recipes.. try their sour orange pie, the turkey meatloaf, and the citrus pork tacos (halve the water, the pork will release juices of it's own)… Didn't Sophia Petrillo make a comment about someone's lasagna once? It had to be this one!

I have a vegetarian roommate and a husband who is allergic to fish. I used diced baby Bella mushrooms with a teaspoon of dark sesame oil to add depth and complexity. My mother always used cottage cheese with a bit of dried tarragon. Love the corn starch trick! Worked like a charm.
I have been wanting to make this since first seeing it….but something always seemed to get in the way. My family requested spaghetti and meatballs….so I decided if I couldn't make the lasagna, I would at least make the sauce. And that's exactly what I did! Wow! Thank you test kitchen for being my muse or catalyst! Whichever you prefer.
I draw the line at anchovies (yuk) and sugar. There are less offensive ways of getting a strong, balanced tomato sauce.

I agree on the cottage cheese over ricotta. I have used it in my lasagna for 30 yrs and when I use ricotta I find it chalky and it ruins the experience.

Just a note on how I make lasagna. Everybody always seems to like the corners and edges, so I use a Baker's Edge edge brownie pan. They fit lasagna noodles just about right in the four long spaces and even make it easy to cut apart. Give it a try!

Sorry – can't sell me on the cottage cheese. My Italian mother taught me to mix the ricotta with 1 egg, parmesan, parsley, salt and pepper and then use it in either lasagna or stuffed shells 🙂
