Paal Kesari in Tamil

Paal kesari is a yummy twist to the regular ones with simple ingredients you have at home and whip up under 15 minutes.

🛒 Paal kesari Ingredients

½ cup Rava/Sooji/ Semolina
1 cup sugar
1 &½ to 2 cups Milk
3-4 tbsp ghee
Salt a pinch
1 cardamom powdered
5-6 cashews
Saffron few strands

📝 How to make paal kesari

Heat a oan with a tbsp of ghee and roast broken cashews until golden in medium heat. Keep aside.

Roast rava without changing its colour.

Add a pinch of salt, add milk and mix well as you add.

Cook covered for 3-5 mins in low flame.

Then add sugar and mix well in mashing way. Do not leave it un attended after adding sugar. Immediately mix.

It may look like small lumps in the kesari but dont worry as you keep mixing and thickens, it will be okay.

Add saffron and cardamom if adding.

Once thick, add ghee as desired and mix well. Garnish with nuts. Serve warm!

📋 My notes

Make sure to add more milk as it will take a while to cook in milk.

While cooking do not let the milk turn colour.
You can even skip cardamom, yet it smells great.
