Bhurji:-

Paneer: 500g
Ghee: 3-4 tbsp
Ginger: 1.5 inch (grated)
Onions: 2 medium (chopped)
Coriander powder: 1 tsp
Red chilli powder: 1/2 tsp
Salt: to taste
Tomatoes: 2 hybrid + 2 desi/ local (chopped)
Green chillis: 2-3 (chopped)
Fresh malai/ cream: 2 tbsp
Garam masala: 1/4 tsp
Chopped coriander: handful

-Start by heating some ghee on medium heat, add the grated ginger, sauté for a bit, proceed to add chopped onions and sweat till lightly translucent.
-Add the coriander and red chilli powder, followed by the chopped tomatoes and green chilli. Season with salt.
-Cook the tomato for 3-4 minutes on medium heat, cover and cook on low heat for 6-7 minutes or until soft and mushy.
-Add the paneer, crushing it into small chunks. Mix it all together and sauté on medium heat.
-Add fresh malai or fresh cream, sauté it along with the onions and add some garam masala as well.
-Turn off the heat and finish it off with some fresh coriander, serve them hot, topped with butter along with white bread.

Bread dough:-

Water: 175g
Whole milk: 125g
Yeast: 9g / 2 tsp
Flour: 440g
Salt: 9g / 2 tsp
Caster sugar: 20g
Butter: 3 tbsp

-Mix the milk and water together and bring to a lukewarm temperature. Mix in the yeast and let it bloom.
-Mix the flour, salt and sugar into a large bowl. Add in the yeast mixture and mix them into shaggy dough.
-Turn it out on the work bench and knead for 5 minutes. Knead in the softened butter until the dough is soft and supple.
-Grease an oil bowl, add in the dough, cover and rest for 2-3 hrs in a warm place or until doubled in size.
-Once doubled, take it out on a well floured counter and roll it out into a flat rectangle. Roll the dough in from the smaller edge into a loaf.
-Transfer the loaf into a butter loaf tin, cover and proof till doubled. Take off the cover once doubled, bake in a preheated oven for 30-35 minutes or until nicely golden brown on top.
-let it cool for a few minutes, de-mould the bread loaf and let it cool completely on a rack sideways.
-Once cooled, slice and enjoy the bread, toasted or as is!!!
