Pasta alla norma (Eggplant Pasta)



Pasta alla norma is a traditional Italian Eggplant Pasta in a tomato pasta sauce. It’s an excellent meaty vegetarian main dish that’s everything you want in a pasta – comforting, satisfying, and slurp-worthy good!

  1. you ltierally burned the garlic then put the onion over it and burned it even more. Stop puting garlic first, put it when the onion is done, then leave it like 30 seconds more, and then put the sauce. stop ruining your sauces like that please. Thanks

  2. Just made two trays of your roasted eggplant (so good!) and used one for this pasta and ate the other dipped in tahini garlic sauce. Both dishes were so yummy!!! I added some fresh mozzarella to the pasta and served with garlic bread.

  3. Nice that you roasted aubergines instead of frying them, but the passata needs to be cooked for at least 30-40 minutes to turn into tomato sauce (5 minutes is basically heating it up, it does nothing to develop the flavour). Better switch the garlic/onion order or the garlic will burn before the onions are done and burnt garlic is bitter as hell.
    Pasta looks like it wasn't cooked in enough water and possibly boiled for a bit too long.
