mushroooms shouldnt be fried with oil in a pen as they contain a lot of water. the shrooms should be fried 8-10 minutes without oil so the water can evaporate, after that you can add some butter or oil. this prevents the mushrooms from being soggy and feeling like you chewing on a sponge.
Good Lawd that's a lot of food. I love cherry peppers too. I usually have in olive salad. Definitely heavy on the garlic, definitely mushrooms. love kale more than spinach but I would never say no to spinach in a pasta. Looks great!
