In this video, I share a simple and delicious pasta salad recipe that’s perfect for any occasion. With fresh vegetables and a tangy dressing, this dish is easy to make and bursting with flavor.

Ingredients:

2 cups farfalle pasta (bowtie pasta)
1 Tbsp salt
2 Tbsp oil

2/3 cups each of chopped
cucumber
red onion
bell pepper
cherry tomatoes
corn

1/3 cup each of chopped
olives
pickles

For the Dressing:

3 tbsp mayonnaise
1 tsp dried parsley
3 tbsp olive oil
1-2 tbsp lemon juice
Salt and pepper to taste

Instructions:

1. Cook the Pasta:
Bring a large pot of salted water and oil to a boil.
Add the farfalle pasta and cook according to the package instructions until al dente.
Drain the pasta and rinse with cold water to stop the cooking process. Set aside.

2. Prepare the Vegetables:
While the pasta is cooking, chop the cherry tomatoes, cucumber, red onion, bell pepper, olives, and pickles.

3. Make the Dressing:
In a small bowl, whisk together the mayonnaise, dried parsley, olive oil, lemon juice, salt, and pepper until well combined.

4. Assemble the salad:
In a large mixing bowl, combine the cooked pasta, chopped vegetables, and the dressing.
Toss everything together until the pasta and vegetables are well coated with the dressing.

Chill and Serve:
Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
Add dried or fresh finely chopped parsley
Serve chilled and enjoy!
