This one-pot Pasta with Chickpeas dish is one of my favorites. This style of dish is perfect for a simple but delicious meal and can be incredibly versatile, as you can choose from many pasta, vegetable, protein, and sauce combinations. It’s also the right way to make a one-pot dish so I’m excited to share it with you.
In my recipe, the pasta comes together with a creamy chickpea and tomato sauce, mixed with herbs that provide a unique aroma and a few hidden vegetables too. The chickpeas are the star of the show as they are full of protein and flavor.

Other than rosemary, I've got all the ingredients (I'll be cooking the chickpeas from scratch). This is going on the menu for the weekend, I think.

A middle eastern trick to smoother chickpeas is to warm them up before blending. Also if you are cooking from scratch put in a teaspoon of baking soda in the water when boiling the chickpeas makes them very tender
Looks delicious. Reminds me a little of pasta fagioli. The chickpeas are on my weekend grocery shopping list.

My Italian grandma made her pasta fagiola very similar to this with her leftover pasta sauce. Maybe not as thick as this but it was a simple light creamy broth and sometimes she would use one can chick peas and one can red kidney beans.

I don’t have 2 cans of chickpeas, only 1. I do have a can of white northern beans. Can I blend the northern beans and use that?

Such a great pasta dish. My mother in law taught me how to make this. Only difference is she adds some celery with the carrots and onions. Sooooo goooood 😀
