At Austin’s Interstellar BBQ, pitmaster John Bates and his right-hand man, Warren McDonald, a.k.a “War Dog,” put a spin on classic Texas fare. Using all of the kitchen skills and attention to detail he learned as a chef in high end restaurants, Bates plays up traditional ribs by rubbing them with a mole seasoning, serving them with a riff on mole sauce and cotija cheese, and makes other distinct offerings like pastrami beef ribs and jalapeño popper-stuffed sausages.

Outside the box is the place to be. I've been smoking ancho rubbed tri tip and making enchiladas out of it. Smoke it. Braise it. Use the resulting broth as a base for the chili gravy. My house has been quite popular.
Those beef ribs are off the chain. We never see them here in Mississippi restaurants, grocery stores. I'm going to find some online. Great vid.

can confirm the scallop potatoes are amazing. the smokiness is something you never think about wanting in cheesy potatoes but its perfection. Blessed this place is 15 minutes away 🙂

Ribs are universal. Everyone cooks ribs. I don't consider it a Texas thing. Brisket, that's it from Texas. That's what they are known for.

It's amazing how simple American cooking is. I think that's a big part of the reason why American food is so one dimensional compared to Europeans who have developed far more complex cooking techniques and recipes.
