Pav bhaji masala
Ingredients:
β Coriander seeds 2.5 tbsp
β Cumin seeds 1.5 tbsp
β Cloves 10 nos.
β Star anise 2 nos.
β Black cardamom 3 nos.
β Cinnamon 2 sticks
β Bay leaf 2 nos.
β Fennel seeds 1.5 tbsp
β Kasuri methi 1 tbsp
β Turmeric powder 1/4 tsp
β Dry ginger powder 1/4 tsp
β Hing 1/2 tsp
β Kashmiri red chilli powder 1 tbsp
β Kaala namak 1/2 tsp
β Aamchur powder 1/2 tbsp
β Salt 1/2 tbsp
Method: Roast the whole spices on low heat and then blend it into a fine powder.
Pre prep
Garlic green chilli paste:
β Garlic cloves 1/2th cup
β Green chilli spicy 4 to 5 nos.
Boiled vegetable:
β Potatoes 7 nos.
β Beetroot 1 nos
β Phool gobhi 1 medium sized
β Hara matar 3/4th cup
Method:
β For garlic green chilli paste, transfer the garlic cloves and green chillies in a mixer grinder, add water as required & grind in a fine & runny paste.
Bhaji
β Butter 50 gm + oil 2 tbsp
β Jeera seeds 2 tsp
β Onions 2-3 medium size (chopped)
β Capsicum 2 medium size (chopped)
β Potatoes 7-8 medium size (boiled & mashed)
β Tomatoes 7-8 medium size (chopped)
β Boiled green peas
β Boiled cauliflower florets
β Beetroot 1 medium size (boiled & grated)
β Fresh coriander a handful (chopped)
β Salt to taste
β Prepared pav bhaji masala 2 tbsp
β Kashmiri red chilli 2 tbsp
β Dhaniya powder 1 tbsp
β Haldi powder Β½ tsp
β Kasuri methi 1 tsp
β Garlic green chilli paste (half)
β Hot water as required
For tadka:
β Butter 50 grams
β A pinch of jeera seeds
β Garlic green chilli paste (half)
β Pav bhaji masala 1 tsp
β Kashmiri red chilli 1 tbsp
β Salt to taste
β Freshly chopped coriander leaves
β Butter as per your preference
β Lemon juice 1 tsp
Method:
Set a big size tawa on medium high heat, add butter & oil, further add jeera & allow it to crackle, add onions, capsicum and cook on high flame for 2-3 minutes.
β Further add the boiled & chopped veggies, salt, prepared pav bhaji masala, powdered spices, mix it really well & try to break down the veggie chunks with the spatula.
β Further add prepared garlic chilli paste, mix well and initially add 1-2 cups of hot water, now use a pav bhaji masher and start to mash the bhaji really well, keep the flame low and mash until the bhaji is almost crushed. Add water tadjust the consitency.
β The base of the bhaji is ready, let the bhaji simmer on low flame by the time you can make the tadka that needs to go on the bhaji.
β For tadka, set a pan on medium heat, add butter, jeera, kashmiri red chilli, garlic paste, pav bhaji masala and add the tadka into the bhaji & mix well.
β Add freshly chopped coriander leaves, butter and lemon juice, mix well and cook on medium heat for 2-3 minutes.
