Dry Ingredients
4 cups all-purpose flour (500 g)
2 tablespoons baking powder (28 g)
1½ teaspoons salt (9 g)
1 cup granulated sugar (200 g)
Wet Ingredients
3 cups whole milk (720 g)
1 ½ cup stick salted butter melted
2 cans sliced peaches (15 oz / 425 g each), drained & diced (total drained weight ≈ 500–520 g)
Optional: 3–4 tablespoons peach preserves (60–80 g) for extra flavor
Topping
3 tablespoons brown sugar (40 g)
1½ teaspoons ground cinnamon (4 g)
Glaze
½ cup powdered sugar (60 g)
1½ teaspoons vanilla extract (7 g)
6 tablespoons milk (90 g) — adjust as needed for drizzle
Optional: 1 tablespoon peach preserves (20 g)
Instructions
Preheat Oven – Set to 375°F (190°C) (or 350°F / 175°C for convection). Place rack in middle position.
Melt Butter – Place 113 g butter in a 9×13-inch baking dish. Melt in oven during preheat until sizzling.
Prepare Batter – In a large bowl, whisk together flour, baking powder, salt, and sugar. Stir in milk until just combined (batter will be loose but pourable). Fold in diced peaches and optional peach preserves.
Assemble – Pour batter into pan over melted butter (do not stir). Mix brown sugar and cinnamon, then sprinkle evenly on top.
Bake – Bake 45–50 minutes until golden and center is set. Tent loosely with foil if browning too quickly.
Make Glaze – Whisk together powdered sugar, vanilla, and milk (plus optional peach preserves) until smooth. Adjust milk for desired drizzle consistency.
